Gluten Free & Vegan Frozen Waffles

Recipe

Makes about 12, 4″ waffles.

Dry Ingredients:
150g potato starch
115g corn starch
40g gluten free flour (rice flour based is best for chewiness)
15g potato flour
25g cane sugar
6g baking powder (1.5 tsp)
2.5g baking soda (0.5 tsp)
3g salt (0.5 tsp)

Wet Ingredients:
420g water
55g oil (avocado, canola, sunflower, etc…)
15g apple cider vinegar
5g vanilla extract (1 tsp) (optional)

Cooking Instructions

Mix all the dry ingredients together then add the oil, water, ACV and vanilla extract and mix it until there are zero lumps.

Use 70g of the mixture per waffle. Yes I put my waffle iron on a scale. Let cook for 5 min, then cool on a wire rack. Freeze.

Toasting Instructions

Toast in a toaster oven for 10 minutes or until hot and crispy.

Background

If you’ve been missing out on gluten free frozen waffles since the great listeria outbreak of the primary producer of gluten free frozen waffles in North America caused the Great Gluten Free Frozen Waffle Famine of 2024/2025, I feel you. Before this happened I came to the conclusion that Trader Joes/Safeway/Foods Co brands were made by the same company and white labeled based on the texture and chew. It really became apparent when they all disappeared at the same time. Vans were clearly different as they were…wetter? Honestly, not a fan of Vans, and I can’t even find those now.

After 6 months I decided I can just experiment and make my own recipe, then make these waffles in bulk. So I threw the TJ’s Gluten Free Waffle ingredients into an AI and told it to make me a waffle recipe based on the ingredients list. The results were not what I was looking for, but I used it as a start. The dry to wet ratio was largely good, so I mainly tweaked the ratios of the dry ingredients. After several delicious rounds I have what I think is a really good recipe. It’s not exactly like store bought, but I like these better.

Now right out of the waffle iron, I’m not a fan of the texture, these really are meant to be frozen and then toasted. This causes a redistribution of the moisture so that you get a somewhat chewy center while the outside is crisp and delicious.

If you’re looking for a waffle maker, I suggest the Cuisinart Round, Classic Waffle Maker – use 280g of the mixture for this model, you’ll be able to cook the whole recipe in about 15 minutes.
